Cocoa interactive jailbreak for the iPhone now supports 1.1.1 jailbreak.

For Windows users who want to jailbreak the iPod touch.

iJailBreak
Apple script that makes jailbreaking easy. Only works on Intel macs. Written by two 13 year olds.
